Much of the botanicals and fruits we use in our craft spirits are produced right here in Colorado. Which is not only efficient but also produces more work for the local community.Īs much as possible, we source raw materials from local producers. For instance, we contract some of our wash to local breweries and complete the fermentation in our distillery. We outsource what processes we can to other local companies. We at NOCO Distillery believe in doing business that benefits not only us but the rest of the community as well. Today we distill over 35 different products making us one of the most versatile craft distilleries in the world.Īll of our spirits are masterfully crafted & blended by renowned industry experts for your enjoyment. We are one of the few distilleries in the world to operate in this manner and are at the forefront of the maturation process. We also use up to 9 other types of woods for maturation. The staves from our casks are seasoned anywhere between 18 - 48 months. We use only the finest American & European oak casks to age our premium craft spirits. Our smaller cuts offer a much smoother spirit. Our slow distillation process increases reflux and copper contact. We ferment our batches for up to 3 weeks to allow the maximum flavor profile possible. We only use copper stills (Column & Pot Stills as shown below). Our micro distillery, is located in Fort Collins, Colorado, at the foothills of the Rocky Mountains from where we get our pristine alpine water.
